The Classic Yammy Culver City Salad
Serves 4 – 6
1 142g container mixed greens of choice
1 398 ml can black beans rinsed and strained
1 large yam cut into 1/2 inch pieces steamed until they can be pierced easily with a fork
1/4 head of cauliflower broken into small buds and blanched for about 5 minutes or until tender

2 cups cooked quinoa
1 medium carrot pealed and grated
1 small beet pealed and grated
1 small zucchini grated
1 ripe avocado peeled pitted and diced
4 Tbsp toasted sesame seeds
Dressing:
1/2 cup tahini
1/4 cup miso paste
1/2 apple cider vinegar
3/4 cup water
2 Tbsp soy sauce
1/2 chipotle pepper in adobo sauce
1 Tbsp adobo sauce
1 clove garlic
1/2 cup parsley
Combine salad ingredients in a large bowl. Blend dressing (I use a hand held blender). Toss salad with dressing and serve!
