Diana Steele’s recipes for Tuesday’s demonstration looks at how to cut added sugar and add nutrients by using 100 per cent pure orange juice in your cooking.

Orange Coconut Overnight Oats:

Ingredients
1 cup (250 mL) Tropicana Pure Premium® Orange Juice
2 cups (500 mL) Large Flake Quaker® Oats
1 cup (250 mL) coconut milk
3 tbsp (45 mL) honey
1/2 cup (125 mL) fresh raspberries
1/4 cup (60 mL) toasted shredded coconut
How to make it
In jar or bowl, stir together oats, orange juice, coconut milk and honey.
Cover and refrigerate for 6 hours or overnight.
Garnish with fresh raspberries and toasted coconut.
Tip: Top with mandarin orange segments or sliced banana if desired. Garnish with toasted sliced almonds if desired.
Tip: Divide into 4 small Mason jars before refrigerating; serve in jars for a lovely presentation.

Pumpkin Orange Banana Raisin Oatmeal Muffins

How many fruits and vegetables can you pack into one muffin?

There’s 19 servings of vegetables and fruit in this recipe which means more than ½ a serving in each muffin.

(Makes 36 muffins)
2 cups whole wheat flour
2 cups white flour
2 cups quick rolled oats
1 cup oat bran
1 cup sugar
1 Tbsp baking powder
1 Tbsp baking soda
2 tsp salt
3 bananas
1 can (753ml) pureed pumpkin
1 cup apple sauce
2 cups Tropicana Premium Pure OJ
2 eggs
1 Tbsp vanilla
1/2 cup vegetable oil
½ c melted butter
2 cups raisins or dried cranberries

Citrus Tropical Smoothie Bowl

Ingredients
1/2 cup (125 mL) Tropicana Pure Premium® Orange Juice
1/2 cup (125 mL) plain low‑fat yogurt
1 banana
1/2 cup (125 mL) frozen mango chunks
1/2 cup (125 mL) frozen pineapple chunks
2 tsp (10 mL) honey

Topping:
1 banana, sliced
1/4 cup (60 mL) sliced strawberries
2 tbsp (30 mL) sliced natural toasted almonds
2 tbsp (30 mL) toasted shredded coconut
2 tsp (10 mL) chia seeds

How to make it
In blender, combine orange juice, yogurt, banana, mango, pineapple and honey. Blend until smooth; divide among 4 bowls.
Topping: Top each serving with banana slices, strawberries, almonds, coconut and chia seeds. Serve immediately.
Tip: If desired, use an assortment of seeds, such as hemp and flax seeds.
