Finish off a barbecue party with this yummy rendition of Key lime pie. This luscious dessert was created in Florida where the special limes grow. They are smaller and more tart than regular Persian limes. If they are unavailable, the juice of any limes can be used.
Key Lime Pie
1 deep-dish pie shell
1 can (396 ml/14 oz) sweetened condensed milk
4 egg yolks, beaten
125 ml (1/2 cup) lime juice
Whipped cream, for serving
Prepare pie crust according to package directions. Using oven mitts, remove from oven and set aside to cool.
In a medium bowl, whisk together sweetened condensed milk and egg yolks until well combined. Add lime juice and mix well.
Pour lime filling into cooked and cooled pie crust. Bake in a 180 C (350 F) oven for 15 minutes. Using oven mitts, remove from oven and let cool. Serve with whipped cream.
Makes 4 to 6 servings.
