Christmas cooking with Global Calgary: Jordan’s Brussels sprouts

Jordan Witzel: Lindsey’s Christmas Brussels sprouts

1/4 cup dried cranberries
2 tbsp balsamic vinegar
1 tbsp olive oil
1 tbsp maple syrup
2 cloves minced garlic
1/2 tsp dried thyme
1 1/2 pounds brussels sprouts, halved
6 carrots, cut bite sized diagonally
Kosher salt and ground black pepper to taste
2 tbsp chopped fresh parsley leaves

Whisk balsamic vinegar, olive oil, maple syrup, garlic and thyme together. Pour over mixture of carrots and brussel sprouts. Top with salt/pepper to taste and bake for 25 minutes at 400F.

Top with cranberries and garnish with fresh parsley to serve
