Saturday Sips: Smoked plum old fashioned sorbet

Pidgin bar manager Nelson Navasero of  shows us how to make smoked plum old fashioned sorbet.

ingredients (makes 2 litres)

250 ml reduced smoked plum juice
250 ml Kozaemon umeshu (plum sake)
625 ml simple syrup (2 parts sugar to 1 part water)
375 ml Nikka from the barrel
12 dashes cardamom bitters
2 scoops of dry ice
2 plums chopped

Method

1. Combine all liquid ingredients into a mixer
2. Place dry ice in a sealed bag and smash with a mallet to break it up into smaller pieces. Be careful when handling the dry ice as it can cause burns if it comes in contact with your skin
3. Add the dry ice into the mixer and blend with liquid ingredients until sorbet obtains a rich velvety texture (around 45 to 60 seconds)
4. Fold in chopped plums and serve into glass bowls or cups
5. Garnish sorbet with orange zest
