Recipe: Meatball challenge

Ahead of the Vancouver Foodster Meatball Challenge, Chef Tai Luong Nguyen of Linh Cafe shares his recipe for Bun Cha, Vietnamese pork meatballs.

Recipe

Meatballs

2 kg ground pork
5 whole shallots chopped up
2 tbsp fish sauce
20 g salt
30 g sugar
10 g ground black pepper
1 brunch green onions cut up

Mix all the ingredients well together then roll it out into meatballs .

Pickled green papaya and carrots

1 green papaya sliced thin
3 jumbo carrots sliced thin
20 g salt
40 g sugar
40 ml white vinegar
1 tbsp minced garlic

Mix all ingredients well and keep in a container in your fridge to use when needed.

Dipping Fish Sauce

200 ml fish sauce
400 ml cold water
200 ml white vinegar
300 g white sugar
2 bird eye chili peppers

Mix all the ingredients well and keep on the fridge to use when needed.

Rice Vermicelli

Have a pot of boiling water, add you vermicelli in and keep stirring in simmering water for 2 minutes.

Fresh Herbs
1 green lettuces
1 bunch of cilantro
1 bunch of mint
1 bunch of Thai basil

Mix all the green and herbs together.
