Chef David Jorge of S + L Kitchen and Bar makes his Waygu steak benny

Butter (Solid, unsalted)1tsp
Chive0.01oz
Eggs2ea
Hollandaise Sauce (Prep before)2floz
Frisee Salad portion (Prep before)1ptn
Duck Fat Potatoes (Prep before)5oz
Sourdough Bread1slice
Fresh peeled garlic2cloves
Canola Oil1Tbsp
Fresh Thyme0.1oz
s+l 6oz Zabuton Prep1ea
S+L dream seasoning prep2tsp

Procedure

  • Poach 2 eggs to soft
  • Meawhile, grill on piece of buttered sourdough toast until crisp
  • Split the steak into 2 (3oz) portions and prepare to medium rare (unless otherwise specified)
  • Place the steak on the bread with the flattest side up.Top with the eggs
  • Ladle the Hollandaise sauce on top of the eggs, garnish with chives
  • Serve with duck fat potato portion and frisee salad

Ensure product is properly labeled, dated, and stored
