Procedure
- Poach 2 eggs to soft
- Meawhile, grill on piece of buttered sourdough toast until crisp
- Split the steak into 2 (3oz) portions and prepare to medium rare (unless otherwise specified)
- Place the steak on the bread with the flattest side up.Top with the eggs
- Ladle the Hollandaise sauce on top of the eggs, garnish with chives
- Serve with duck fat potato portion and frisee salad
