Cranberry Bounce Cocktail

Glassware: Flute

Ingredients:
1 oz cranberry cordial (see recipe below)
0.25 oz honey syrup (1 part honey, 2 parts hot water)
0.5 oz vodka
Sparkling wine

Method:
Build directly in flute. Add cranberry cordial, honey syrup, and vodka. Give it a quick stir, top with sparkling wine, and garnish with lemon twist.

Cranberry Cordial

Ingredients:
4 cups cold water
3 cups (12 oz) fresh cranberries, cleaned
2 orange peels
2 star anise
½ cinnamon stick
½ vanilla bean, split lengthways
1 cup apple juice

Method:
In a large saucepan, combine all the ingredients (except the apple juice) and bring to a slow simmer for about 30 minutes, until cranberries are soft. Remove as many hard spices as possible. Pour contents into a blender and blend until soft. Then finely strain the mixture. Allow to cool to room temperature. To cut the tartness of cranberries, add 1 cup of apple juice (or to taste).
