Dirty Birdy fried rice
Ingredients:
- 2L Brown Rice
- ¼ Cup Chicken liver
- 3 Pieces Prawns cut to bte size
- ¼ Cup Firm tofu (small dice)
- 1 Tspn Fresh bird eye chili (thinly sliced)
- 1 Egg
- 1 Tablespoon Dark soy sauce
- 1 Teaspoon Sesame oil
- 1 Teaspoon fish sauce
- 1 Teaspoon chilli oil
- 1 Tablespoon sweet soy
- 1/4 cup duck gizzards

Preparations:
- Wash rice.
- Brown rice cooked in a rice cooker, 4L water to 2L rice.
- Rinse chicken liver and gizzardss with salted cold water (just enough to cover), cover with plastic wrap and place in the fridge at 4˚C or lower (24 hours soak then strain and return to fridge until ready to use).
- Add oil in a hot wok, add livers, gizzards, prawns and tofu. Cook for about 1-2 minutes or until lightly coloured.
- Add chillies then rice, toss rice until everything is mixed evenly.
- Add soy and sesame oil to rice and mix until evenly incorporated.
- In a pan on med cook an sunny side up egg
- Plate and serve immediately.
