Saturday Chefs: Daksha’s Gourmet Spices

WATCH: Daksha and Bhaskar of Daksha’s Gourmet Spices offer their take on Chana Masala.

Ingredients:

1 onion chopped
2 tablespoons oil
2 cups cooked chick peas
1 green pepper chopped
1 package “Daksha’s Gourmet Spices” Chana Masala Mix
1 ½ teaspoons salt
1 ½ cups tomato sauce
1 cup water
3 teaspoons brown sugar
Chopped cilantro for garnish (optional)

Method:

1. Heat oil in a pan on medium heat. Add onions and sauté.
2. Add cooked chick peas, chopped green peppers, Chana Masala Curry Mix, salt, tomato sauce and water. Stir well.
3. Cover and cook for 20 to 25 minutes, stirring occasionally.
4. Add brown sugar and cook for a further 5 to 10 minutes. Stir well.

Garnish with chopped cilantro. Serve over a bed of basmati rice or with Naan, Rotis or Puris.

Spicy Puri

Ingredients:

2 cups all-purpose flour
1 tablespoon “Daksha’s Gourmet Spices” Chana Masala Curry Mix
¾ teaspoon salt
2 tablespoons olive oil
½ cup warm water (approximately)
3 to 4 cups oil for frying

Method:

1. In a bowl stir together flour, Chana Masala Curry Mix and salt.
2. Add 2 tablespoons olive oil and blend till mixture is crumbly.
3. Bind dough with ½ cup of water, if you need more add a little at a time.
4. Take handfuls of dough and roll out into large rounds about 1/8 inch thick.
5. Using a cookie cutter cut out puris.
6. Heat oil in a deep fryer or wok on medium heat.
7. Add cut out puris in hot oil. Puris will puff up into round balls. Turn puris over. Cook till crispy golden brown.
8. Remove puris from oil and allow to cool. Store puris in a cookie jar or a sealed glass container.

Excellent with a cup of Traditional Chai.
