Crispy yam discs

Serves 6 or 4 pigs

Perhaps one of the most difficult things to create without the use of a deep fryer. After multiple attempts at producing limp, soggy yams, I met success with the following method.

Ingredients:

2 large Yams, peeled, try to choose ones that are even in diameter

½ cup grapeseed oil

½ cup cornstarch

2 tablespoons Moroccan Rub, or your favourite rub

2/3 cup egg white

Sea salt to finish

 

Slice the Yams into ¼ inch slices, set aside. In a separate bowl, mix the cornstarch together with the rub and set aside. Place the eggwhites in another bowl and set aside.  Preheat your oven to 400F.

Place a large non stick pan on medium high heat, add 3 tablespoons of grapeseed oil to the pan.  While the pan is heating up lightly brush or spray oil onto the yam slices, just enough to enable the cornstarch to stick.

Dip each slice into the cornstarch mixture, then into the egg white, then into the hot pan.  Maintain a med high heat for about 4-5 minutes, then turn them over.

Once both sides are brown transfer to a baking sheet and keep warm in the oven. Repeat.

To finish sprinkle with sea salt and enjoy the crunch without deep frying!
