This is such a wonderful opportunity for young people who have a passion for science. While giving them the exposure it also gives them an opportunity to feel confident and proud of what they’ve accomplished.

The 50 projects that were there were so impressive! I don’t even remember students doing things like that when I was in middle school. The students had innovative ideas and a passion for making this world a better place.

This is just the first step of getting young people involved and interested in changing the world through science and technology.

Brooke from Food to Fit has a tasty Tex-Mex recipe in Healthy Living

Cooking with the kids is one of the easiest ways to develop their healthy eating habits, plus it’s a fun interactive family activity! Brooke made us somes tex mex chicken casserole, and while it’s delicious, it’s also nutritious. Here’s the recipe:

Preheat oven to 400 F

Ingredients
• 1 cup whole grain minute rice, uncooked
• 1 – 14 oz can black beans
• 1 cup kernel corn
• 2 cups low sodium chicken broth
• 3 chicken breast, cut into pieces
• 1 – 14 oz can diced tomatoes
• 2 cloves garlic, minced
• 1 small green chilli pepper, chopped
• ½ small red onion, chopped
• 1 tsp chilli powder, 1 tsp cumin
• 1 cup shredded cheese (Cheddar and/or Monterey Jack)

Directions
1. Mix the beans, uncooked rice, and corn into a 9 x 13 inch casserole dish
2. Cover with chicken broth
3. Place the chicken pieces on top of the rice mixture
4. Mix the tomatoes, garlic, onion, chilli, and spices together. Spoon over the chicken
5. Bake uncovered for ~35 minutes
6. Top with the shredded cheese and bake another 10 minutes
