Wed, Mar 5 – Public School Board Chair Ray Morrison is in studio to talk about the vote to change Bedford’s logo and name.

Jessica learns how to cook a simple pizza

I am notorious for not using my kitchen, partially because it’s small, cramped and I don’t have a dishwasher.

But mainly because I don’t want to spend hours cooking a meal for one.

Theo showed me that recipes really don’t have to consume your day, like the healthy pizza we made for example, that took five minutes to prepare the toppings and 30 seconds to put together.

I think I can manage recipes like that. Being that March is Nutrition Month, I have just made it my goal to use my kitchen to cook myself healthy quick meals.

Red pepper goat cheese pizza recipe:

Preheat oven to 400°F (200°C) if using flatbread or 450°F (230°C) if using pizza dough pizza pan or baking sheet.

  • 1 – 12” round of flatbread or enough pizza 1dough for a 12-inch (30 cm) pizza
  • 1 – tbsp olive oil 15 mL
  • 1 – cup shredded mozzarella cheese 250 mL
  • ¼ cup cup soft crumbed goat cheese 50 mL
  • 1 – large red bell pepper, thinly sliced 1
  • 1 – large tomato, sliced 1
  • ¼ cup sliced black olives 50 mL
  • ¼ cup sweet Vidalia onion, sliced (optional) 50 mL
  • 1- tsp dried basil (or 2 tbsp/ 25 mL chopped fresh basil) 5 mL

Step 1. Place flatbread on baking sheet. Alternatively, if using pizza dough, spread out dough on lightly greased pizza pan to make a 12-inch (30cm) circle.

Step 2. Brush olive oil on top of flatbread or pizza dough. Sprinkle with mozzarella cheese. Top with goat cheese, red pepper, tomato, black olives, onion, if using, and basil.

Step 3. Bake pizza in bottom half of preheated oven for 10 to 15 minutes or until crust is golden and filling is bubbly.

Yield: 4 servings

Cooking tip: Using a baking stone is a great way to give your pizza a crusty finish. Place the pizza stone in a cool oven, turn on the oven and preheat the stone for about 45 minutes before cooking the pizza.

Oils and vinegars to help Jessica with her cooking

I use my butter-flavoured olive oil as a great substitute for butter in cooking.

I got mine in Napa, California, so imagine my surprise when I walked into Dutch Growers in Saskatoon to see that they too sold that flavor of olive oil among many, many others.

This is their newest display (it’s only about a month old) and is a fun way to add flavor to your meals.

Paige, the culinary consultant, suggested using the chocolate flavoured vinegar to flavor steaks on the BBQ.

She also mentioned you can pair different flavours of olive oil and vinegar to add a twist on the classic duo for dipping a baguette.

Her personal favourite combo right now is basil oil and strawberry vinegar… sounds amazing to me.

Melissa hears about the Sentiment art workshop

It was great to see young people getting involved in their community and taking the initiative to showcase their passions.

The Sentiment art show will display 25 pieces from a youth group with an outdoor theme.

It was great to meet Michael and the crew and see how excited they were to hold their first inner city art show.

They also mentioned to me that they are excited to have live music there to complement their pieces.
